Blueberry Raspberry Oatmeal Muffins

 

1 cup flour
1 1/2 cups oatmeal
1/2 cup sugar
1 tablespoon baking powder
1 cup milk (if you're a soy drinker, I recommend. Great taste.)
1 egg
2 tablepoons vegetable oil
zest of 1 lemon
1 teaspoon vanilla
1/2 cup blueberries
1/2 cup raspberries


 

topping:
1/2 cup oatmeal
1 tablespoon sugar


 

Est. Prep + Bake time: 40 minutes
Yield: 12 muffins


 

Preheat oven to 400ºF

Combine all your dry ingredients in a large bowl. Do the same with wet ingredients in a seperate bowl. Add wet ingredients to dry ingredients and stir until combined. Gently mix in your berries.

Line muffin pan with liners and scoop batter in. Fill 3/4 of the way. Top with oatmeal/sugar mixture

Bake for 20-25 minutes. Check with toothpick to see if it comes out clean

Let cool in pan for 5 minutes or so, and then move to rack to complete cooling.
