Cucumber & Tomato Salad
2 large cucumbers
1 lb. tomato
2-3 TBSP oil and vinegar
salt and pepper to taste
optional additions
- cheese (mozzarella, feta)
- parsley, finely chopped
- green onion or chives, chopped
Directions
Slice the cucumbers lengthwise twice so that you end up with four pieces Slice these into 1/4 - 1/2 inch thick pieces (the end result should look like discs cut into four pieces). Chop the tomato up and mix with the cucumber pieces. Drizzle the oil and vinegar over the mixture and add salt and pepper to taste. We enjoy adding feta cheese as well; it's very flexible and many salad toppings work well with it.
