Soy Lecithin
Soy Lecithin is used to keep a candy bar together, and is found in a lot of them. It is also used in bakery items the help the dough rise. It is also one of the cheapest crops in the country, so companies will buy it. It is extracted from the waste of soybean processing and can lower cholestrol in people and animals.

- You have soy allergies and want to play it safe.
- You are avoiding refined oils, soy lecithin is derived from soy oil.
